Domestic Diva: Sticky Chicken Drumsticks with Fried Rice -Failsafe

I love this recipe for it’s simplicity and especially due to the fact that all 3 of kids loved it and gobbled it up with gusto, including my fussy plain Jane youngest! Simple; as it is using 3 ingredients… my new BBQ sauce recipe which I whipped up in the Thermomix, chicken and oil. You could use any chicken pieces for this, wings, drumettes, a whole chook, kebabs,  or tenderloins. I used Drumsticks this time and for Christmas Day we used this method with a whole duck (moderate amines) cooked on the BBQ, oh so tasty! I have also used the sauce to marinate some kangaroo for my husband and I (Kangaroo meat is a high amine), and it would work well will beef and lamb too. You would just need to alter the cooking time to match the cut of meat you are using.

Rice Bran oil

Make a batch of the BBQ sauce recipe, you can find the link here. Marinate the chicken in enough sauce just to lightly coat them for a minimum of 20 mins.

Pre-heat oven to 180 degrees.

Use a baking pan that the pieces will all fit in comfortably without being on top of each other. Pour enough Rice Bran oil into the base of the pan and swirl around so that the base is lightly covered so the chicken won’t stick to the pan. You don’t want them swimming in oil. Place the marinated chicken in the pan on top of the oil.

I cooked the drumsticks for approx 40 – 50 minutes, basting with more of the BBQ sauce every 10 minutes. Depending upon what cut of chicken you used, adjust cooking time accordingly and keep an eye on them so they don’t burn.

Serve with Failsafe Fried Rice, hot chips or your favourite veggies or salad.
