Pizzas don’t always have to be savoury… why not try a sweet one for dessert? My family love the idea of pizza for dessert, it almost seems naughty as it’s not the norm. I bring you two ideas to try, A Pear Crumble Pizza and a failsafe “S’mores” Pizza knock off. I leave the salt out of the dough recipe when making a sweet pizza.
The pear crumble is not overly sweet. The crumble topping has just the right amount of crunch on the stewed pears.
I know a traditional S’mores is using graham crackers, but they are not readily available here in Australia. I figure the pizza base can replace that. I used caramel top and fill also (can’t help adding a bit of caramel to anything sweet!), Carob chips, roasted marshmallows and carob drizzled over the top. A bit decadent! This would also be great using Carob Cashew Paste spread on the base and nestle white melts drizzled over the top.

Pear Crumble
Ingredients
- Pizza Dough (without salt)
- 30 g spelt flour
- 50 g plain flour (or use GF flours)
- 60 g oats
- 50 g butter, diced
- 40 g brown sugar
- 4 Pears, peeled and sliced
- 20 g sugar
- ¼ tsp citric acid
- ½ tsp vanilla essence
- 1 tsp agar agar
Instructions
- Pre heat oven to 200° fan forced. (Place pizza stones into oven if you have them).
- While dough is rising, make the crumble topping and stewed pears.
- To make the Crumble - combine the spelt flour, plain flour, butter, oats and brown sugar together of 5 seconds on speed 4. Set aside in a small bowl.
- Stewed pears. Without cleaning the bowl, add pears, sugar, citric acid, vanilla and agar agar. Cook for 10 mins 90° reverse speed stir. Place the basket on top to help pears reduce. It will thicken more as it starts to cool slightly.
- Divide pizza dough into 2 - 4 portions depending upon how many and how big you would like your pizzas. Roll out portions of pizza base into rounds 5mm thick approx. (I roll my bases on baking paper to make it easier to transport between bench to trays to oven).
- Slightly curl the edges up all around the edge of the pizza so the mixture won't run off during cooking.
- Spoon some of the stewed pears over the base of the pizza.
- Sprinkle a generous amount of the crumble over the top and right to the edges.
- Place pizza in oven on the stones and cook for 15 - 20 mins or until base is cooked, lightly golden and the crumble has browned slightly. Cut into wedges with a pizza cutter or knife.
- Enjoy warm served with cream or ice cream.
Notes
"S’mores" Failsafe Pizza
Ingredients
- Pizza Dough (without salt)
- Caramel top 'n fill
- Carob buttons
- White Marshmallows
Instructions
- Pre heat oven to 200° fan forced. (Place pizza stones into oven if you have them).
- Divide pizza dough into 2 - 4 portions depending upon how many and how big you would like your pizzas. Roll out portions of pizza base into rounds 5mm thick approx. (I roll my bases on baking paper to make it easier to transport between bench to trays to oven).
- Gently poke the base all over with a fork so it base cooks evenly and doesn't develop bubbles.
- Curl the edges up all around the edge of the pizza so the marshmallows won't run off during cooking (speaking by experience...).
- Bake blind for 12 - 15 mins on the pizza stones (or on a tray) until lightly browned.
- Place a few spoonful's the caramel top and fill over the base and spread around to cover evenly. Sprinkle with carob buttons.
- Place the marshmallows over the top of the pizza and place back into the oven for 8 - 10 minutes or until marshmallow is melted and lightly browned.
- Melt a handful of carob buttons in the microwave with a little cream. Using a spoon, drizzle over the top of the pizza straight from the oven and serve immediately.
