Hungarian Fried Potato Bread

Hungarian Fried Bread or Lángos as it’s called is a fried bread made with mashed potato. I was in Hungry when I was about 19 and unfortunately I can not remember ever having one of these (though that was a long while ago now and the memory is not very vivid any more, lol!). It’s kind of nice to imagine myself strolling down the beautiful streets of Budapest nibbling happily away on a Lángos, it is good to dream!

Recently I went to some local markets and a man was selling the Hungarian fried bread. He had heaps of different toppings available to choose from and my husband and I shared one with sour cream and prawns on when the kids were not looking (shhh). It was amazing, even though it was fried it wasn’t oily, it was so tasty and filling. Once we got home my husband did some searching and found a recipe which we were surprised to find was actually suitable for the Failsafe Diet just as it was, I just adapted it to make in the Thermomix. The original recipe I used was from  The Hungarian Girl blog, but sadly it has disappeared. Here is another one similar from Hungarian Tidbits.

4 Large potatoes (approx 700g)
650g water
2 1/4 teaspoons of active dry yeast
1/2 cup (130g) milk
2 cups (220 grams) bakers flour plus extra for kneading
1/2 teaspoon sugar
1/2 teaspoon salt
Vegetable oil for deep frying

Peel and chop potatoes, place them in steaming basket. Pour water into the Thermomix bowl and place steaming basket into position in the bowl. Steam for 25 minutes at Varoma Temperature on Speed 1. Once cooked, drain water and inset the butterfly attachment. Put potatoes into the Thermomix bowl and mix on speed 5 for 10 seconds. Remove butterfly and cool potatoes by putting the bowl into the fridge for about 20 minutes.

Add the milk and the yeast together in a small bowl. Let it dissolve for about 5 minutes.

Add the yeast mixture, flour, sugar and salt to the mashed potatoes. Mix on closed lid position on interval for 2 minutes. Place the dough into a large bowl and cover for about 30 minutes or until it doubles in size.

Once dough has risen, roll into floured Thermomat or work surface. Cut into circles about 12 cm in diameter and 1½ cm thick.

In a large cooking pot, heat about 4cm of vegetable oil. Add dough one at a time and fry until golden on each side. Drain on paper towels. Store in Thermoserver between paper towel to keep warm.

These are great plain. From my searches online it seems they are traditionally served with lots of garlic and sour cream. We tried this and I must say, it was really, really good! I also made my Failsafe Mince in the Thermomix and served it with that. Miss 3 liked hers plain (no surprises there!), Miss 5  had her Potato bread with Pear Ketchup on and the mince on the side topped with sour cream. Master 9, my husband and I loved them topped with garlic, the mince, sour cream and chives. One very contented family after dinner tonight! Just the way I like it!
