I love discovering recipes that I can make in the Thermomix to save money! So you can understand my excitement when I stumbled upon a Thermomix recipe shared to make golden syrup. It is something I buy regularly from the supermarket and to be able to make a batch myself for under 90 cents has my attention.

The original recipe on the Thermomix Recipe Community is not completely failsafe and is easy to adapt. I shared it on my Domestic Diva Facebook page and came to the conclusion that to save confusion for those new to the Failsafe way of eating it is easier to write it up with the full failsafe conversion.  The original has lemon in it to stop crystalisation, I used citric acid and that has done the trick. There is also a recipe to make a double batch of golden syrup, the ingredients are doubled and the cooking time is the same. I have yet to try this… I have three batches that I have made while testing to get through first.

Golden Syrup - Homemade

Save money by making the basics in your Thermomix. Golden syrup is a huger money saver!
Prep Time 5 minutes
Cook Time 55 minutes
Total Time 1 hour

Equipment

  • Thermomix

Ingredients
  

  • 50 g brown sugar
  • 15 g water
  • 150 g boiling water
  • ½ tsp citric acid

Instructions
 

  • Add brown sugar and 15g water to Thermomix bowl.
  • Cook for 15 mins / 120 degrees (Varoma temp for TM31) speed 1 with the MC (measuring cup) on.
  • Boil your kettle. Add boiling water, sugar and citric acid.
  • Cook for 40 mins 120 degrees (Varoma Temp for TM31) speed 1 with the MC off.
  • Pour syrup into sterilised jar. Leave to cool with lid off for approx an hour to allow it to thicken.

Notes

Hints:
The first time I cooked this, I had the basket on top as I was worried about it splattering, but the syrup did not thicken two hours after pouring into a jar. I placed it back into the Thermomix bowl and cooked for another 5 minutes and it was perfect. Second time I made it without the MC and basket, it thickened up nicely in the jar. Just keep an eye on your Thermomix to ensure it doesn’t splatter (it didn’t for me).
If you would like a thicker consistency, you can cook for another 4 – 5 minutes Varoma Temp speed 1.  
Store in the pantry for a few months in a sterilised jar.

  2. How do you achieve this if you do not have a thermomix ?
    Should I just boil it on the stove ?

    • Yes, you should be able to do it on the stove although I have not tried it. I would suggest the first step a moderate to high heat and the second step a low to moderate heat. You will need to keep an eye on it for the 40 minutes that it doesn’t boil over.

  3. Could you be omit the citric acid?

    • The citric acid replaces the lemon in the original recipe. Both are used to help prevent the crystallisation of the sugar. I have not tried it without personally but have seen others share pictures of theirs and they have crystalised.

    Hi Rona I have made your Golden Syrup many times it is yummy. Because I am so sensitive golden syrup is in great demand in my kitchen to give me some extra flavour. I have shared this recipe with many of my friends with a Thermomix who don’t want to pay the top dollar when they can whip it up themselves. Keep those recipe’s coming. Happy New Year!

  5. Hi Rona I am making the Golden Syrup but I didn’t realise I should use white sugar instead of raw and I have used dark brown sugar instead of the raw. I’m hoping it will work for me.

    • Hi Helen, it should work using the other sugars, just that if you are doing the elimination of the failsafe diet, raw sugar is a high salicylates and it is recommended to use light brown sugar rather than dark brown.
