Custard Mountain Slice

I am indulging my sweet tooth again. Layered slice using mountain bread, custard and carob icing. Simply divine! Easy to put together, and looks classy (well I still need practice at making it look that way… but you can get an idea of how classy it can be if made by a chef!). I have made this slice two ways, and both are really really good! The first one I used one batch of Thermomix custard, and the second time I lashed out and used two batches of custard making the second one carob. It defined the layers a bit more too. Of course if you don’t have a Thermomix, you can still make the custard the old fashioned way (however that is… lol, I wouldn’t know, that’s why I have my Thermie!) But the same principal applies anyway. Even better, it’s failsafe! 

The Photo above was my 1st attempt at this slice. This is how I assembled it:

Version 1

6 slices of Mountain bread (flat bread)
1 serve of Thermomix custard
Make a serve of the custard from the Thermomix EDC on page 155. Allow to cool.
Lay a slice of mountain bread in the bottom of a tray that it fits snugly in. I used a 22cm square tray and trimmed off about 2cm off each slice of the mountain bread, this was easy to do while it was in the tray than on a chopping board, you can bend it or slice along easily with a knife.

Spread a thin layer of custard on top of the mountain bread, followed by another piece of mountain bread. Continue until all the custard has been used and finish with the mountain bread. I managed to get 6 slices of mountain bread in this one. Place in the fridge while you make the carob icing.

Next make the icing:

80g carob buttons
40g Rice syrup
40g milk
75g Nuttelex

Chop carob for 5 sec on speed 6.

Add remaining ingredients, then cook on 70° on speed 3 for 2 mins.
Pour over slice and leave in the fridge until set.
Cut into slices and serve.

Version 2

6 slices of Mountain bread (flat bread)
1 serve of Thermomix custard
1 serve of carob Thermomix custard (Just add 25g of carob powder with all the ingredients)

Make plain serve of the custard from the Thermomix EDC on page 155. put aside and allow to cool. Then make the second carob custard and allow to cool.
Just like the first slice above, lay a slice of mountain bread in the bottom of a tray that it fits snugly in. I used a 22cm square tray and trimmed off excess. Spread a layer of plain custard, I used half of it. Then mountain bread, then I used all the carob custard, but you could separate it into another layer again if you wish. Mountain bread, then the rest of the plain custard. Finish with mountain bread. Place in the fridge while making the icing, see recipe above for the icing.

Once carob icing has set, decorate by melting 1/4 cup nestle melts in the microwave. Spoon into the corner of a freezer bag and snip a smidge off the corner to use as a piping bag. Run the white chocolate backwards and forwards over the whole slice for desired effect.

Place back into the fridge to set. Cut into slices and serve.

 

Handy Hint: We go through a lot of mountain bread in our house. The great thing about mountain bread is that you can order direct from them (min 8 pkts) cheaper than the supermarket and no postage! Gotta be happy about that! Here is the direct link
