Creamy Garlic Chicken Risotto

I created this Thermomix risotto because I love garlic! It is so simple to make, beautifully creamy and has a lovely subtle  flavour.  It would be easy to make this a vegetarian dish by swapping the chicken for 500g of vegetables of your choice.

Domestic Diva: Creamy Garlic Chicken Risotto

Small handfull of parsley
3 shallots
2 cloves garlic (decent size cloves)
40g butter
350g aborio rice
900g stock (I used 900g water + 3 tsp homemade chicken or Vegetable Stock Concentrate)
500g diced chicken
60g sour cream
salt to taste

Add parsley and chop for 5 seconds on speed 6. Set aside.
Add garlic and shallots and chop for 5 seconds on speed 5.
Scrape down sides, add butter and saute for 2 minutes, 100 degrees, reverse speed 1.
Insert butterfly. Add rice and 50g of the stock and saute for 2 minutes, 100 degrees, reverse speed 1.
Add stock and chicken, cook for 18 minutes, 100 degrees, reverse speed stir.
Add sour cream (in small blobs), parsley, salt and mix on reverse speed 2-3 for 5 seconds.
Place in thermoserver and let stand for approx 10 minutes.

Notes: I also sometimes use some of the chicken stock from making Deli Chicken towards the 900mls of stock.

  3. Jury verdict is in yum! I didn’t have cream but I drink raw milk so I put a tiny bit in to see what would happen and it worked. The downside is I loved it so much I had seconds 🙂

    • Hi Clare, If you are on the failsafe diet, you could chop Brussels sprouts with the garlic and shallots for a finer texture or quarter with a knife if you want larger veggies. Diced choko or swede is nice too. If you can have moderate Salicylates you could use carrot, asparagus or snow peas.

    Just about to try this for dinner, sounds great! I do believe there is a typo – it says 900 g of stock… Won’t fit! We will go ahead and do 900ml

    • Hi Jen, have you added many extra ingredients? It will usually fit, but be very full. It is not a typo, 900ml is equivalent to 900g in TMX measurements. 🙂

  10. I made this last night and LOVED the flavours. Only downside for me was that it was VERY ‘soup’ like and some of the rice had a crunch, even after 10 mins in the thermoserver. I did use regular cream instead of sour cream, so not sure if this was a problem. I will definitely make this again, might cook for a few minutes more the next time. SO SO SO TASTY!!!

    • Glad you enjoyed it Louise. 🙂 Shame it didn’t cook through properly for you… I have never had that happen before. Cream is runnier than sour cream, but I would not have thought it would make that much of a difference. Did you use Aborio rice?

  11. This is such a great meal. My rice hating husband loves it, and so do my young children. For a low salicylate and dairy free option, I mill a handful of cashews before starting the recipe and set aside, added in the same time as if cream.

  12. Hi, i loved this recipe when i made it with chicken… was going to make it again tonight and just noticed i have no chicken left. do you think it will work with sausages?

    • Thanks Danielle. It should be fine with sausages, I would chop them up a bit into chunks first and maybe sauté them with the garlic and shallots. Enjoy! 🙂

  14. Looking forward to trying this tonight for my adult sons birthday as well as a chicken, chorizo and spinach rissotto. Asked what he wanted and this is it. I will probably be replacing the sour cream with ajam coconut cream, think this will work what do you think

      I am sure the risotto will be lovely with coconut cream (moderate salicylates). Did you try it?

    Great recipe! I have been using it for about 6 months and have tried other risotto recipes and my kids won’t eat any other! I just dishing up another batch now and know the kids will eat it all and sleep well. Job done.

  18. Hi, I really like your receipe’s but I’m one of those people that need to be able to print out receipes and it would make it easier if you had a print selection on your website or downloadable PDF’s. You can print it from a computer but from a phone it’s not allowing me to print.

    Can’t wait to look up more receipes and use my thermomix as much as I should be using it!!

  20. At 8 pm on a Friday night, just having finished work I was looking for something simple to have for dinner. I thought of a risotto but not having many veggies I wasn’t hopeful. I had chicken so searched for chicken risotto in Google. Up came your recipe. Bingo, I even had sour cream! Well, I have just finished eating it, and blown away. So simple, yet so delicious.     I want to make this tonight but have 7 mouths to feed – will it make enough?! I have only just gotten my thermie so still learning about quantities/volumes after so long doing it all myself!

    • Hi Kelly, congrats on getting a Thermomix! 🙂 Do you have a Thermoserver? The risotto does not take long to cook, so you could make one batch and keep it in there while you make another batch if necessary. One batch of this recipe feeds my family of 5 with a little left over for seconds. Hope that helps.

    I do not have a thermosaver can u suggest what I may be able to do please.
    I wanted to add broccoli and carrot to make a one pot dish, when should I do this..
    This will be my first time in making a risotto in the Thermomix 🙂

    • Hi Tanya,
      If you don’t have a Thermoserver you can cook the risotto for a few more minutes or leave it to sit in the Thermomix bowl once cooked for 10 minutes before serving. You can add other vegetables in with the last 6-8 minutes of cooking (depending upon how soft you would like them). Enjoy 🙂
