This is a quick meal to throw together when you have had a busy day that hasn’t gone according to plan (we all know about those!) and need to reassess your dinner plans quickly… especially if you have some Deli Chicken, handy in your freezer!
1 pkt of rice vermicelli noodles
4 tablespoons Rice Bran Oil
3 cloves garlic, minced
2 breasts of Deli Chicken, diced
3 tablespoons of rice syrup
1 cup Beans, chopped into 2cm lengths
2 sticks Celery, sliced finely
1 cup Bean shoots
2 eggs, lightly beaten
Soak noodles in hot water for 2 minutes then drain. Set aside.
Add 2 tablespoons of the oil to wok. Stir in the garlic till fragrant, then the chicken and toss through. Add rice syrup and stir to coat chicken. Stir fry for 2 minutes. Add beans, celery and bean shoots and stir fry for another 2 minutes. Remove from wok and place into a large bowl.
Add the last 2 tablespoons of oil to wok and heat. Add noodles and stir fry for approx. 4 minutes. Add noodles to chicken in the bowl and toss together.
Finally, pour egg into wok and stir to coat wok thinly. Leave until cooked through then roll up into a long sausage and place on a chopping board and slice thinly. Scatter rolled egg over the top of noodle dish to garnish. Serve.
