Carob Truffles

Although I don’t want to think about it just yet… Christmas is just around the corner! It always sneaks up on me so quickly, even when I attempt to be prepared each year! Knowing my history, I have decided to start sharing some of my Christmas recipes with you now.

Rum balls have always been a traditional Christmas treat that I love. When we first started doing the Failsafe diet, finding a suitable variation for my son was a must so he wouldn’t miss out. This recipe has turned into my kids favourite Christmas treat, and guess what… it is something all 3 like! Yah! I usually make 2 batches from the one recipe. At the end I take half of the mixture out and add whiskey to the other half. So I end up with an adults and kids treat, both still suitable for the failsafe diet. To distinguish the difference between the two, I sprinklethe kids ones with icing sugar and roll the whiskey ones in crushed cashews.

100g cashews
1 x 250g pk of Arnots milk arrowroot biscuits
2 tabspoons carob powder
1 tin of condensed milk
2 tablespoons whiskey (optional)
Marshmallows
Icing sugar for dusting
Crushed cashews for rolling the whiskey ones in 

Chop cashews in the Thermomix on speed 6 for 4 seconds. Add the biscuits and chop on speed 6 for 2 seconds. Add carob powder, and condensed milk. Mix together for 1 minute on interval for TM31 and kneading function for TM5.
If adding whiskey, take half of the mixture out for the kids, set aside in a bowl. Add the whiskey to the remainder. Mix on interval for another 30 seconds.
For the truffles without whiskey: Cut marshmallows in half (this makes the balls a decent size, a whole marshmallow makes them very big). Take about a heaped teaspoon of mixture and flatten it out with your fingers. Place the marshmallow in the middle and wrap the mixture around it. Lightly moisten your fingers and roll it into a ball. Set aside on a tray. Refrigerate.
When ready to serve, sprinkle with icing sugar.

For the whiskey truffles: you can do as above with the marshmallows, but I usually roll them into balls with out. The mixture will be more moist from the whiskey, working with lightly wet hands will help to stop it sticking. Roll in crushed cashews to coat (crush in the Thermomix for 4 sec on speed 6).

Notes: The Arnots milk arrowroot biscuits are the only brand without preservatives in. White Pascal marshmallows are suitable for the failsafe diet. If you are unable to have marshmallows, the carob truffles are just as nice without.Domestic Diva: Making Carob Truffles

        I have tried this recipe and the results are impressive! It feels like you are eating a ball with coconut in it (must be the cashew) Very impressed, will try the white chocolate truffles next. Haven’t had any special treats at Xmas for me for years so I am very pleased! I used gluten free shortbread biscuits (shop brought)

Do you think I could do the teddy bear biscuits (recommended by Sue at a recent talk), as they don’t have any milk in them – and make sweetened condensed rice milk by cooking rice milk and sugar for AAAGES – maybe would have to make cashew and rice milk…don’t know…any tips for the dairy free failsafers? I may just have to crack on and experiment 🙂

    • Hi Elizabeth, any sweet biscuits should work, so the teddy bear ones will be fine. We are not DF, so I am not really familiar with alternatives in that area unfortunately. It is possible to make your own with soy or rice milk, or I believe there is a soy condensed milk that you can purchase. Please let me know how you go. 🙂

  3. *a*m*a*z*i*n*g* whipped these up for my daughter’s failsafe party food box for a party this afternoon. They were so good. So easy and so effective! The other kids were eyeing them up too – next party I’ll take a plate for everyone to share. Thank you P31 woman 😉
