Pear and Caramelised Leek Pizza (& more Failsafe Savoury Pizza Ideas)

Who doesn’t love pizza? It is a staple at our place, usually on the menu  at least once a week. We have a lot of our favourite topping that usually get re-hashed each week since it’s convenient and quick. Then there are times I like to experiment and try something new.

I have spotted a few fancy pizzas on menus with pear on, though usually accompanied with brie, blue cheese or goats cheese, honey, prosciutto and caramelised onions. I decided to give a failsafe version a go. This was really tasty and I will definitely make it again.

This pizza is Pear, Caramelised Leek with a philly garlic sauce, drizzled with rice malt syrup and garnished with fresh parsley. Delish!

PIZZA TOPPINGS

Shredded chicken   Cooked chicken breast, shredded with a fork or in the Thermomix for 4 seconds reverse speed 4 
Deli Chicken
Sliced Lamb
Leftovers  Pizza is a great way to use up any leftovers from meals.
Mince Meat   Lamb, veal, chicken or beef, pre cooked in your favourite failsafe method
Seafood   White fish, calamari, bugs, clams, crayfish, lobster, oysters, sea scallops, sea urchin – Ensure it is fresh for failsafe. 
Leek   Sliced raw or caramelised (as below)
Brussels Sprouts  sliced thinly
Potatoes  Par cooked and sliced
Choko Diced, either raw or par cooked. Grated.
Shallots
Bamboo shoots
Tofu
Philly cheese, ricotta, cottage cheese, mascarpone, quark, sour cream, goats cheese (plain and unflavoured)
Eggs   Aussie style, crack a whole egg on top of your other fillings, it cooks perfectly in the oven
Pears  Tinned or fresh
Swede  Diced, either raw or par cooked. Grated.
Parsley  Sprinkle to garnish
Chives
Garlic  pre roasted for extra flavour, minced, garlic powder or garlic salt.

^ BBQ Chicken Pizza is another of our favourites. Failsafe BBQ sauce mixed with minced garlic for the base sauce, diced chicken lightly fried in garlic and rice bran oil. More BBQ sauce stirred through the cooked chicken it before scattering on the pizza. Thinly sliced leeks and Brussles sprouts, philly cheese sauce, shallots and chives to garnish.

 

Pear and Caramelised Leek Pizza

This pizza is Pear, Caramelised Leek with a philly cheese garlic sauce, drizzled with rice malt syrup and garnished with fresh parsley. Delish!

Ingredients
  

Pizza base

  • Use whichever pizza base recipe you prefer. I use the recipe from Cookidoo. There are links for recipes, including GF ones in the post above.
  • 1 tbsp Rice bran oil
  • 1 - 2 tsp minced garlic

Caramelised Leek

  • 1 1 leek, chopped into 3 cm chunks
  • 1 large clove garlic
  • 30 g rice bran oil
  • 50 g brown sugar

Philly Cheese Sauce

  • 3 large cloves garlic
  • 30 g butter
  • 150 g philly cheese
  • 60 g cream

Other Toppings

  • 1 ripe pear, peeled and sliced thinly
  • Parsley to garnish
  • Rice malt syrup

Instructions
 

Pizza Base

  • Make, prepare and rise your pizza base. Divide into 2 - 4 portions depending upon how big you want your pizzas. You can make family sized and everyone gets a piece or two. Or everyone can have their own mini pizza.
  • Make the caramelised leek and philly cheese sauce while dough is rising.
  • Pre heat oven to 200°
  • Roll out portions of pizza base into rounds 5mm thick approx. (I roll my bases on baking paper to make it easier to transport between bench to trays to oven).
  • Pour oil and garlic onto base. Spread around the whole base with the back of a spoon to get an even coverage. (You may need to adjust amounts depending upon the size of your base and how much garlic you like.

Caramelised Leek

  • Place chopped leek into the Thermomix bowl with the garlic. Chop on speed 5 for 3 sec.
  • Add oil and brown sugar. Cook at 100° for 12 mins on reverse speed 1, with the steaming basket on top of the lid.
  • To make the caramelised leeks without a Thermomix, thinly slice leeks and cook in a frying pan over medium heat, stirring until cooked through and leeks begin to caramelise.

Philly Cheese Sauce

  • Chop garlic for 5 seconds on speed 7.
  • Add butter. Melt for 2 minutes on 50° speed 1.
  • Add philly cheese and cream.
  • Mix to combine for 10 seconds on speed 7.
  • If making the cheese sauce before hand, keep in the fridge. It will set hard, you can just spoon it on in blobs or just before using it, place in the microwave for 20 seconds to soften it a little.

To Assemble

  • After putting the oil and garlic on the base, spread a generous amount of the caramelised leeks on top.
  • Place the sliced pear on the leek
  • Top with dollops of the Philly cheese sauce. Sprinkle with a little parsley
  • Place onto baking tray. Bake in hot oven for 15 - 20 minutes or until base is lightly browned and cooked through.
  • Drizzle with rice malt syrup and a sprinkle of fresh parsley to serve.

Notes

We invested in pizza stones since we don't have a pizza oven 'yet'. I love how it cooks the base evenly and crisps up, even when making deep pan pizzas. The trick is to remember to place them in the oven before you turn it on!
