White Chocolate Bark
This is something you can make as gifts for family and friends, take on a plate to share at a Christmas party or function, our just to indulge a little for yourself during the festive season.
- Pretzels, broken into chunks
- 50 - 70 g Dehydrated pear, diced finely *
- 70 g Cashews
- White mini mallows (**see notes below)
- 400 0g Nestle White melts
Line a tray with baking paper.
Place cashews into Thermomix bowl. Chop cashews for 4 seconds on speed 4.
Combine pretzels, pear and cashews together in a small bowl. Set aside.
Without washing the bowl, chop the melts for 5 seconds on speed 6.
Melt 3 minutes 50 deg speed 2. Scrape down sides and melt for a further 20-30 seconds at 50 deg speed 2 or until completely melted.
Pour melted chocolate onto lined tray and smooth the chocolate out with your spatula. Immediately sprinkle the combined topping ingredients and mini mallows evenly over the top. Use the back of a spoon to gently push them into the melts slightly if necessary.
Place into fridge to set for approx. 30 mins – 1 hr. Break up into pieces to serve. Store in the fridge in an air tight container.
Variations: This recipe is very versatile, you could also use carob instead of the Nestle white melts. As alternative toppers use Werthers originals, carob chips, rice cakes broken up, musk sticks, crushed pear drops or failsafe candy canes from Allergy Train, honeycomb, rice bubbles, amaranth, buckwheat or millet puffs. If you really want to get creative, you could swirl a small amount of melted carob through the Nestle white melts before sprinkling the topping on.
* I dehydrate my own pear. buying dried pear will contain Sulphites (220-228) and should be avoided.
** I used the Sshmallows! brand mini marshmallows but it seems there are some supermarkets selling them with new packaging and the ingredients have changed to include sulphites 221. Although the sulphites in the glucose should have been cooked off in the high heat cooking process… it really depends upon your sensitivities. Always double check ingredients! Otherwise use white pascall brand and chop them up into smaller pieces.
To clean your Thermomix bowl after making melting the chocolate, add milk to the bowl and swish around on speed 3, 60 deg for 4 minutes. Then froth on speed 8 for 10 seconds. Enjoy a lovely white choc hot milk!
