Golden Syrup - Homemade

Save money by making the basics in your Thermomix. Golden syrup is a huger money saver!

Equipment

  • Thermomix

Ingredients
  

  • 50 g brown sugar
  • 15 g water
  • 150 g boiling water
  • ½ tsp citric acid

Instructions
 

  • Add brown sugar and 15g water to Thermomix bowl.
  • Cook for 15 mins / 120 degrees (Varoma temp for TM31) speed 1 with the MC (measuring cup) on.
  • Boil your kettle. Add boiling water, sugar and citric acid.
  • Cook for 40 mins 120 degrees (Varoma Temp for TM31) speed 1 with the MC off.
  • Pour syrup into sterilised jar. Leave to cool with lid off for approx an hour to allow it to thicken.

Notes

Hints:
The first time I cooked this, I had the basket on top as I was worried about it splattering, but the syrup did not thicken two hours after pouring into a jar. I placed it back into the Thermomix bowl and cooked for another 5 minutes and it was perfect. Second time I made it without the MC and basket, it thickened up nicely in the jar. Just keep an eye on your Thermomix to ensure it doesn’t splatter (it didn’t for me).
If you would like a thicker consistency, you can cook for another 4 – 5 minutes Varoma Temp speed 1.  
Store in the pantry for a few months in a sterilised jar.
