Seafood and Chips with Garlic Mayonnaise

All I wanted to do on Mother’s day was eat seafood, a simple request really, isn’t it? Fortunately I am blessed with a husband that loves to cook seafood! He cooked up a wonderful platter for me to enjoy, it was just a shame I had to share it with the kids, lol. Miss 4 kept coming back and grabbing handfuls of calamari to take back to her plate, I nearly didn’t get any.

This is a simple dish, tasty and made to impress. I have finally managed to pin him down to write it up for you.

Seafood and Chips with Garlic Mayonnaise

Seafood… A Mother’s day request…

It’s our favourite, and I love to cook it..

But what to cook for Mother’s day…

Head on down to the fish shop to see what I can find…

We’re very fortunate that there is quite a varied selection allowed on the failsafe diet.

But still no idea what to make.. so I grab

250g sea scallops
2 cooked bugs (Balmain or Moreton Bay)
2 squid tubes
plus I grabbed 1 salmon fillet (moderate amines – this was a bit of decadence just for Rona)

Still not sure what to make, but on the way home it came to me – Fish & Chips…
But of course with a difference – mixed seafood with roasted potato and choko wedges…
Simple, yet tasty.

 

“The Chips”

Pre heat the oven to 180 degrees
Peel 1 “large” potato for each person and cut into wedges.
Peel and seed 1 – 2 large chokos, and cut into wedges.
Chop the end off several garlic cloves, or heaps of them if you love them as much as we do. Add with the skins on so they don’t burn. (The skins come off easily once cooked).

Toss everything well in rice bran oil to coat in a large baking dish. Sprinkle with garlic salt.

Cook for 25 minutes and then turn.
Cook for a further 25 – 30 minutes until done.

So while the chips are in the oven, prepare and cook the seafood.

 

“The Seafood – Squid Tubes”

Cut tubes into rings.

To crumb the rings: Dip into flour seasoned with garlic salt, then into 2 whisked eggs. I used a combination of 100g breadcrumb and 80g crushed rice bubbles for the crumbs.

Shallow / deep fry in oil for a couple of minutes until cooked (turning once).

“The Seafood – Scallops”

Mix the scallops in 1-2 teaspoons of rice malt syrup to coat. (you can even have them marinating for a bit while you do the calamari).
Heat a small amount of oil in a pan on high heat.
Cook the scallops for 2 – 3 minutes on each side.
Be careful not to burn the scallops, or to over cook them.

“The Seafood – Bugs”

Simply remove from shell, and de-vein – they’re perfect as they are!

 

“The Dressing”

“The Salmon” (moderate amines)

Lightly cooked in the same pan after the scallops to make the most of the caramelised juices with a little butter and garlic. A few minutes on each side until cooked to your liking.

 

Place it all on a platter and serve with the garlic mayonnaise.

 

Variations

This recipe lends itself to many variations – basically whatever seafood is available in the shop, and what you love..

You could use crab, mussels, fresh fish, oysters.

You could also add sweet potato wedges as well.
