Failsafe Mince with Wedges & Sour Cream

This meal is my son’s favourite. This is another great variation for using mince. I use the Failsafe Mince in the Thermomix and serve it on top of Potato wedges with sour cream and Pear Ketchup. It may sound like a strange combination, but it works and is rather good!

 

All you need is to make the recipe for Failsafe Mince in the Thermomix.

1 packet of Woolworths homebrand frozen potato wedges or make your own from peeling and slicing potatoes into wedges.

Spray oil

Sour Cream

Pear Ketchup or Chilli Pear Ketchup

Pre-heat oven to 200°C.

While the mince is cooking in the Thermomix, Spread wedges out on a flat tray and lightly spray wedges with spray oil.  Bake in the oven for 10 mins then turn them over. Bake for another 5 minutes or until cooked and lightly browned. The Woolworths packet actually says to deep fry them, which you can if you prefer, but personally I like to do them in the oven.

To serve, place a generous amount of wedges in a bowl, top with the mince, then a dollop of sour cream followed by a squirt of Pear Ketchup or Chilli Pear Ketchup

Variations: This is also really nice with fresh chopped chilli’s and coriander on top (both are very high salicylates)

Notes: I mentioned on the Failsafe Mince in the Thermomix recipe, that I freeze portions for my kids. This is another great way of using that mince from the freezer for a quick kids dinner.

A quick and easy way to make potato wedges is to use an apple slicer.
