White Chocolate Truffles

Two versions of white truffles, cute ones for the kids and vodka ones for the adults. If making them for adults only, just double the vodka amount and add the mixture with the biscuits. Otherwise if making for kids and adults, I take out half of the mixture into a separate bowl, then add the vodka, so I have 2 lots and everyone is happy. To distinguish which one is which, I used Hopper Festive 100’s & 1000’s which are coloured by fruit and veg not numbers, so contains some Salicylates. We can cope with some Salicylates so I love using hoppers colours and sprinkles for special occasions. For the vodka ones I piped carob across them. These are a bit decadent, but hey, it’s for Christmas!

1 x 250g packet of milk arrowroot biscuits (or any sweet biscuits)
2 x 375g packets of Nestle white melts
80g cream
1 teaspoon vanilla essence
2 tablespoon Vodka (optional)
Hopper 100’s & 1000’s

Crush biscuits on speed 6 for 3 seconds. Set aside.
Place one packet of the white melts, cream, and vanilla into Thermomix bowl. Melt at 50 Deg for 4 1/2 minutes on speed 1.
Add crushed biscuits, mix on speed 2 for 20 seconds until combined.
(Optional) Take out half the mixture and set aside in a bowl. Add vodka to the remaining mixture and mix on speed 2 for 10 seconds.
Roll mixture into little balls with your hands. It is easier to roll if your fingers are slightly moistened. The mix without the vodka can seem too dry but comes together when rolled in your wet fingers. Otherwise add 2 tablespoons of syrup from tinned pears.
Place truffles on a tray and refrigerate for at least 1 hour.

For the last packet of the white melts, pour half the melts into a small bowl and melt them in the microwave for 1 minute (or in the Thermomix bowl at 50 Deg for 4 minutes on speed 1).  Dip the balls into the Nestle white melts using a teaspoon. Make sure they are fully coasted. Then sprinkle some of the hopper 100’s & 1000’s over the top for the kids. If you need more chocolate, melt the other half and continue. I found the melts started to set quickly, so easier to do half at a time.

For the Vodka ones I piped a carob icing mix over them
50g icing sugar
10g carob powder
4 teaspoons water

Mill the sugar for 10 seconds on speed 9. Add all the other ingredients, mix on speed 4 for 20 seconds.  It needs to be a smooth runny consistency. Place into piping bag and pipe thin stripes over the top of each.
Keep refrigerated.

Above, a clever but failed attempt to coat the truffles in crushed honeycomb.
Tasted divine, but I forgot that honeycomb goes all gooey and melts after a while!  🙁

Notes: Normal white chocolate is high in amines, Nestle white melts are suitable for the failsafe diet.
If you are just doing a kids only version and the mixture is too dry, you could add 2 tablespoons of the syrup from tinned pears to get a more moist consistency.
If you don’t have a Thermomix, biscuits could be crushed in a freezer bag with a rolling pin and mix together the ingredients in a bowl by hand.
