Whiskey Cream Sauce

This is my Failsafe diet version of a Christmas Brandy Sauce using Whiskey. Unfortunately brandy is out for the Diet, but hey, whiskey is in!  This suits my husband, he is a whiskey man. I have to hunt him down whenever I make this sauce as he takes off with the Thermomix bowl and a spoon as soon as he hears the machine beep to say it’s ready, lol!

The original recipe for this sauce I got handed down from my mum, and it had brandy in the recipe. We have used this recipe each Christmas for as long as I can remember. It was always my brother and husbands combined job to add the brandy to the sauce on Christmas day. Sometimes it was so strong I could barely eat it, which made me designated driver, lol!

I have included the original microwave recipe and my Thermomix version.

40 g unsalted butter
20 g plain flour
60 g caster sugar
2 tbs (70g)  golden syrup
310 ml milk
60 ml Whiskey

 

Microwave Method:

Place the butter in a 1 litre Pyrex jug and microwave on High (100%) for 35 seconds until melted.
Add the flour and blend well.
Mix in the sugar and golden syrup and microwave on High (100%) for 1 minute.
Add the milk gradually and Microwave on High (100%) for 5 minutes, stirring several times during cooking.
Add the Whiskey just before serving.

 

Thermomix Method:

Place all ingredients into the Thermomix bowl. Cook on 90° for 7 minutes speed 4.

 

Serve with your favourite dessert. Pictured above is the Maple steamed Puddings in the Varoma made with carob powder. A perfect Failsafe diet substitute for Christmas Pudding.

Notes:

This sauce thickens once it has been sitting for a while. I have made it successfully in the Thermomix using either flour or cornflour, if you are gluten free use cornflour. If you would like a thicker custard consistency add 10g more of flour or cornflour.

    • Yes, your dash was a very good dash, lol! It is a shame you can’t get the ingredients over there, would cost a fortune to post it all over, making it the most expensive Pudding around!
