Whiskey Cream Liqueur

I have tried a number of different recipes to find the perfect liqueur that satisfies my taste buds using whiskey. I personally don’t like the smell or taste of whiskey, but since it’s one of the 3 beverages that are suitable for the failsafe diet, I was on a mission to find a way to like it. This recipe is the one that did it for me! Oh it’s so good, wonderful to have as a little nip before bed, straight or on ice.  I have adapted it from the Thermomix My Way Of Cooking cook book to make it suitable for the failsafe diet. Chocolate is very high in amines which is why I have used carob.
This recipe makes 1 litre.

Whiskey Cream Liqueur shot

400g Cream
250g Whiskey
20g Nestle white melts
20g Carob buttons *
180g White sugar
1 egg

Using a small mixing bowl or jug sitting on top of the lid of the Thermomix, measure out half of the cream, 200g, and set aside. Use a second small bowl or jug to measure out the Whiskey and set that aside also.

Place the  Nestle white melts, Carob buttons, sugar into the Thermomix bowl. Mill on speed 8 for 10 seconds. Add egg and the remaining 200g of cream, mix for 10 seconds on speed 10. Scrape down sides of bowl with spatula. Then cook for 5 minutes at 90°C on speed 2.

Cook for another 4 minutes at 90°C on speed 3 and alternatively add the whiskey and cream by pouring onto the lid allowing it to drip through with the measuring cup in place.

Rinse a bottle under hot water and pour the liqueur into it. Allow it to cool completely before storing in the fridge.

* Notes: Most carob buttons I buy are hard and can be milled with the sugar. One brand I have used, the Australian Carob Co ones are a lot softer and will not mill but melt easily. If using this brand, wait and add them in when cooking the cream and allow to melt through.
Carob buttons can be purchased from health food stores, but most of them will contain other ingredients which are failsafe and flavour which is usually vanilla.  If you are on the strict elimination diet, you can buy them without vanilla from Allergy Train or Carobana.

    • Hi Sue, I would assume, unfortunately that a translation would involve lots of whisking on the stove… that’s why I love my Thermie! 😉 Please let us know how you go if you try it. Cheers.
