Rice Cake “Popcorn”

A treat we like to have when having a family movie night is “popcorn” made from Rice Cakes. All of us love this and if I don’t serve it out in individual bowls there will be fights to get more than everyone else! Corn is high in salicylates and glutamates which my children react to, so normal popcorn is out. This is a great alternative for those that can’t have corn or are on the Failsafe Diet.

A little while ago there was a lot of talk on the Failsafe Facebook groups about Rice Cake Popcorn, I decided to take a few photos while I was making them and add it to my blog so you can pin it and find it easily to refer back to.

When my fussy Miss 3 started kindy I was scared about what to actually put in her lunch box that she would eat. I made some Rice Cake Popcorn especially for her since I know she loves it so much. I was shocked to find it untouched in her lunch box that afternoon. When I asked her why she didn’t eat it she replied “because we only eat that when we watch movies, mummy”! I think I have a little creature of habit, lol.

The method:

Rice cakes (I do approx 12 for the 5 of us)
Nuttelex
Topping of choice

There are a few different ways to do this. I like to spread the plain rice cakes (you can use thick or thin) with a generous layer of nuttelex on each side. Lay out on a tray lined with baking paper. Bake in a pre-heated oven at 180 deg for approx. 10 minutes until they become crunchy. But keep an eye on them, someone mentioned on the forums that it caught alight once!

Crunch up the rice cakes into bite sized morsels in a bowl. Sprinkle with whatever takes your fancy… salt, garlic salt, vanilla salt, or icing sugar for a sweet alternative.

Rice Cake Lolly Gobble Bliss Bombs

Some of the girls mentioned on the Failsafe group some of the sweet variations that they make with their rice cake popcorn. Which made me remember my all time fav growing up… lolly gobble bliss bombs! Can anyone remember these or am I showing my age now, lol. They were a treat I loved growing up as a child. Popcorn covered in an amazing thick caramel. I am drooling just thinking about them! So I had to give it a try and introduce my kids to a special childhood treat of mine. The outcome… I had to hold them back so I wouldn’t miss out!

Domestic Diva - Rice Cake Lolly Gobble Bliss Bomb

90g Cashews
120g nuttelex
160g sugar
50g rice malt syrup
Crushed cooked rice cakes (as prepared above)

Chop cashews in Thermomix bowl for 2 seconds on speed 6. Set aside.
Add remaining ingredients. Cook at Varoma temperature for 10 minutes on speed 1 or until boiling. Remove MC (measuring cup) and drop speed down to stir and cook for another 5 minutes.
Add cashews and stir to combine for 10 seconds on speed 1.
Pour over the crushed cooked rice cakes and stir to coat evenly with a spoon. Allow to set for 10 – 15 minutes.

Notes: I made my caramel in the Thermomix, you can use the same ingredients and cook in a saucepan on the stove until sugar is dissolved and then boil for 4-5 minutes.
