Poppyseed Roll

I have a big jar of poppy seeds in my pantry and I bought them since they are suitable to have on the failsafe diet. I don’t use them much, so decided to do a search on some uses for them. I stumbled upon a number of recipes for a poppy seed roll, they looked amazing but were not ok for the failsafe diet. So I decided to try making my own in the Thermomix.

I love baking, but I am not the greatest with bread, especially shaping it, as you can see by my photos! Fortunately it cooked all right and the layers of the roll worked beautifully. I used the Brioche recipe from the Thermomix cookbook, but you could use your own favourite sweet bread dough. It made a huge loaf which I would probably halve and make two next time or try individual scrolls. It is lovely served warm or at room temperature, on it’s own or with a dusting of icing sugar or even with custard.

Make the Brioche dough from the Thermomix EDC.
100g Sugar
330g Warm milk
1 sachet dry yeast or 20g fresh yeast
1 tsp salt
80g butter
650g bakers flour
1 egg

Place sugar in the TM bowl and pulverise for 3 secondson speed 9.
Place warm milk, yeast, salt, butter, flour ad egg in TM bowl. Mix to combine for 10 seconds on speed 7.
Set dial to closed lid position. Knead for 3 minutes on interval speed.
Remove dough and let prove for 30-60 minutes. 

Poppyseed filling:
250g Poppyseeds
100g cashews
210g milk
60g sugar
1 teasp vanilla extract

Add Poppyseeds and cashews to TM bowl. Grind for 20 seconds on speed 8.
Add milk and sugar.
Cook at 80° for 7 minutes on speed 2.
Add Vanilla and mix for 30 seconds on speed 8. Scrape down sides and mix for another 30 seconds on speed 8.

Roll out the dough out flat with a rolling pin into a rectangle shape onto a floured surface.Spread the poppyseed mixture on to and spread out evenly over the dough, leaving an inch around the edges.


Roll the dough up and place onto a tray lined with baking paper.

Shape as desired or leave in a long log. I did a really bad effort of a round one and twisted it lightly.

Brush with beaten egg. Bake in a hot oven 200°C for approx 30 minutes or until golden.
