Lamb and Pesto Pizza

Pizzas are great for making left overs look spectacular. After our Lamb roast with the Celery pesto, I thought that they would be perfect on pizza, and my word… they were amazing! You seriously need to make the roast just to get the left overs to make this pizza. Celery Pesto, roast lamb, leftover roast potato, caramelized leeks, and a special philly (Philadelphia) sauce over the top. So full of flavour and suitable for the failsafe diet. I also made another pizza the same using Real Meals Deli Chicken, that was really good too.

I love the pizza base recipe from the Thermomix Basic Cookbook and always use that. Though you can just use your own favourite pizza base recipe.

Lamb and Pesto Pizza

Leftover lamb roast with the Celery pesto on a pizza,.

Ingredients
  

  • Prepared pizza bases
  • 1 Leek
  • 20 g vegetable oil
  • 50 g brown sugar
  • Celery pesto
  • Left over Lamb roast
  • Left over roast potato, sliced
  • 50 g Philly Cheese
  • 30 g Pear Ketchup
  • 2 tbsp water
  • ½ tsp salt
  • Dried parsley (optional)

Instructions
 

  • Pre-heat oven to 200°C
  • Chop leek in the Thermomix bowl for 5 seconds speed 6 .
  • Add oil and brown sugar. Cook for 10 minutes 100°C speed 1, with the basket on top instead of the measuring cup.
  • Spread prepared pizza base with a generous amount of Celery pesto
  • Next spoon blobs of the caramelised leeks over the base. 
  • Scatter sliced potato and the lamb all over the pizza.
  • Don’t bother cleaning the TM bowl after caramelising the leeks, make the philly sauce in it for extra flavour.
    Add Philly cheese, ketchup, water and salt to the bowl. Mix for 30 seconds on speed 4 . (If the mixture is still too thick, add a little more water). You can pour or spoon the sauce on the pizza, but I found it easier to put it in a piping bag and pipe it on. (I was trying to be creative, lol, as you can see by my photos I need a little more practice!)
  • Sprinkle with dried parsley.
  • Bake in oven for 12 – 15 minutes, or until base is cooked and lightly browned.
