Domestic Diva: Jimmy's Meatballs and Spaghetti

Everyone in our family has a set night that they cook dinner. I love getting everyone involved and they have to choose their menu before the grocery shop. My husband is a really good cook and I love it when he creates new dishes. We have watched a few cooking shows recently where the meatballs are massive and they only put three big ones on the plate rather than lots of little bite sized morsels. Jimmy decided he wanted it give it a go without the tomato to make a failsafe version. I’ll hand over to my better half…

“Tonight I had a hankering for a spaghetti bolognese – something I’ve not had in a long time. Sadly my youngest isn’t into mince as the moment, but she loves meatballs. So that made it simple, tonight was going to be meatballs and spaghetti.

So how to make a bolognese? Looking over a couple of other recipes that I’ve created in the past, I was able to create a starting point, and then just went wild.

Makes approx 14 meatballs.

Meatballs
2 cloves garlic
1 shallot
50 g Breadcrumbs
1kg mince
2 eggs
1 teaspoon salt

Prepare Meatballs
Add garlic and shallot to Thermomix bowl, chop on speed 8 for 5 seconds.
Add breadcrumbs, mince, eggs, salt. Combine on dough setting to mix for 1 minute and 30 seconds

Roll into balls approx 85g in size each.

Lightly spray a casserole dish and place the meatballs into it. Set aside in refrigerator while making the sauce.

Clean & dry bowl.

Pre-heat oven to 180 deg.

Sauce
I x tin Red Kidney Beans, drained and rinsed
300g Choko
2 stalks of Celery –  (roughly chopped)
3-4 Shallots
3-4 cloves garlic
1 Leek
10g Carob powder
50g Brown Sugar
2 teasps Salt
1 teasp dried Chives
600ml Water

Prepare Sauce
Add all ingredients except the water. Mix on speed 8 for 5 seconds.
Add water.
Cook for 25 minutes on 100 deg, Speed 2.
Puree by turning to speed 5 then slowing increasing to speed 9 for 30 seconds.

Pour sauce evenly over the meatballs in the casserole dish.
Cover with alfoil. Bake in the oven for 15 minutes.

Remove alfoil and bake for a further 15 minutes.

Cook spaghetti as per packet directions. Serve meatballs on top of the cooked spaghetti with the sauce. garnish with fresh chives and parsley.
