Happy New Year!!

To help celebrate the new year, I thought it was time to indulge in a new cocktail for myself. Gin, whiskey and vodka are all spirits suitable for the failsafe diet. I have been in a rut of occasionally just drinking gin and lemonade lately, nothing wrong with that, but it needed a makeover! After a little search on Pinterest, I stumbled upon this recipe for “Delicious Gin Cocktail Recipe with Poached Pear Simple Syrup” that looked perfect. Just what I was looking for, I had to convert it to Failsafe and a Thermomix recipe.

I must warn you, these little cocktails go down incredible well. The pear syrup is lovely, I think I need to make a few batches of it to keep handy in the fridge. 

Pear Syrup: Make a few hours before using.
1 whole pear (fresh or tinned)
180g water
70g sugar

Peel and de-seed the pear. Place into Thermomix bowl with the water and sugar. Mix on speed 4 for 2 seconds to chop the pear. Heat for 10 minutes 90 deg speed 1 with the simmering basket on top of the lid without the measuring up to allow it to reduce. Then reduce heat to 70 deg for 10 minutes speed 1 with the basket on top still.
Place the measuring cup on top, slowly turn to speed 5 then to speed 9 and puree for 30 seconds. Pour into a glass jar or jug and place into the fridge to cool.
Syrup makes enough for two cocktail recipes, 4 drinks.

The Cocktail:
Serves 2
140g syrup
70g Gin
110g Ice
¼ teasp citric acid

Place all ingredients into the Thermomix bowl and blend on speed 8 for 10 seconds.
Serve immediately in small cocktail glasses as is, or if desired, over more ice.

Hints: You can double or triple the recipe to cater for more guests.

Mocktail:

140g Pear syrup
100g Use either Soda water / tonic water / lemonade*
110g ice
1/4 teasp citric acid

Place all ingredients into the Thermomix bowl and blend on speed 8 for 10 seconds.
For a more decadent mocktail, serve with a scoop of ice cream and more ice.

Notes: Schweppes bottled ‘natural lemon flavour’ is the only lemonade that contains no preservatives and suitable for failsafe, although some people still react. Ensure that the soda water and tonic water does not contain preservative 211.
