Crunchy Chicken Bites

In my quest to get more protein into Miss 3, I came up with these two recipe ideas for chicken. They are quick, easy and versatile. It is basically the same mixture, just used in different ways. The Chicken and Philly cheese mixture is also great as it is and is perfect for spreading on to sandwiches and wraps, or baked in the oven to create something similar to “popcorn” chicken. Miss 3 adores kettle chips and would eat them all day long if I would let her, so using them as a crunchy coating works perfectly. This is suitable for the failsafe diet and great for school lunch boxes! 

I am excited about this recipe as ALL 3 of my kids scoffed everything on their plates and then had seconds and thirds!! That I am sure, would make any mum happy! Then they asked if they could have them in their lunch boxes for school!

600g cooked chicken
1 shallot
1 clove garlic
100g Philadelphia cheese
80g Pear Ketchup
160g (approx 1 cup) Plain flour
Salt or garlic salt to season
2 eggs
60g rice bubbles
80g plain salted Red Rock or Kettle chips

Shred cooked chicken in the Thermomix for 2 sec on reverse speed 4. Set aside.
Chop shallot and garlic for 5 sec on speed 7
Add philly cheese and pear ketchup and mix on speed 4 for 7 sec.
Return chicken to TM Bowl and mix for 5 sec on reverse speed 4 or until combined.
Take small child sized mouthful amounts and form into balls. Place on a tray and refrigerate for approx 1 hour.

Pre heat oven to 180 °C

Place flour into a shallow dish and season with salt or garlic salt. Lightly beat eggs in another shallow dish.
Crush rice bubbles and kettle ships in the Thermomix bowl on Speed 5 for 7 sec. Pour into a separate shallow dish.
Dip each ball into the flour, then egg, then roll to coat with the crushed rice bubbles and chips. Place on a baking tray lined with baking paper and bake for approx 20 minutes or until lightly golden.
Serve with hot chips and Pear Ketchup.

Notes:
You could use left over chicken for this recipe. I used 600g of diced chicken that I cooked in the frying pan.
If you don’t have a Thermomix, the chips and rice bubbles can be crushed in a freezer bag by running a rolling pin over them.
If you are doing a Salicylates challenge, you could add a teaspoon each of ground cumin, ground coriander and a pinch of dried chilli powder (all very high Salicylates)  to the flour for rolling in.

    Thanks for these amazing recipes. We are complete newbies to the failsafe way of life for our 5 year old boy – we are only a week in! All of these ideas and recipes are certainly helping us eat more than rice bubbles during our elimination diet! We are going dairy free too so I was just wondering if you had any ideas as to a substitute for the philly cheese. (I sooooo hope he passes the dairy challenge when we get around to it because it will make life so much easier and he loves cream cheese!)

    You know I have never even tried tofu before – but your link looks like I should give it a shot! I’ll just make sure to find a ‘soft’ tofu to make sure we are sticking to the RPAH elimination ‘rules’.

  3. Hi! Just wondering, is the Philly to help bind it together? In which case, do you think replacing it with an egg will work? I can’t have tofu. Thanks!

    • Hi Rachel, yes the philly is to help bind the ingredients together. You could give it a go with egg, I have not tried it so not sure if you would need one or two. Please let me know how it goes. Cheers.

  4. Just wondering if you have frozen these and if it’s better to crumb first or freeze and crumb later? My 6year old who can be fussy with chicken really liked them too!

    • Hi, I usually crumb, cook and the freeze once cooked. Then they just need to be re-heated for a quick meal. If you crumb and freeze you will need to put a layer of “go-between’ paper between them so they don’t stick together too much.
