Cashew Butter

Domestic Diva: Cashew Butter

A while back on some of the Facebook Failsafe forums I was talking to a few of the girls about making cashew butter. In the past all my attempts had failed, my cashew butter was too dry and not flavoursome and my kids turned their noses up at it. Toni on the forum said she made the version from the RPAH  Elimination Diet book with success in her Thermomix, thanks Toni. I don’t think I had been mixing it for long enough in the Thermomix.  So I finally gave it another go and now all 3 of my kids love it. So nice to have something that all 3 like at once! I would ideally like to make a version that is just straight cashews, but like my husband said, all 3 like it, don’t change it!  For those that haven’t tried making it, here is how I made it in my Thermomix.

300g raw cashews
1 tablespoon (20g) Rice Bran oil
1/2 teaspoon salt
5g Rice Malt Syrup

Spread cashews out on a tray lined with baking paper and roast cashews in the oven at 180°C for 6 – 10 mins, depending upon your oven. Keep an eye on them as they brown very quickly.
Chop in the Thermomix for 4 sec on speed 6.
Add oil, salt and syrup. Mix on speed 6 for 4 – 4 ½ minutes stopping to scrape down sides every 30 seconds. I found the longer I did it for, the softer and more spreadable consistency it became.  Store in a jar.

Notes: Baking is optional, roasting increases the amines in the cashews. I like to give just a slight colour to release the natural oils and give a smoother texture to the cashew butter.

I have also made this in the Thermomix when camping without access to an oven so I roasted the cashews in the Thermomix bowl for about 15 minutes on Varoma reverse speed stir.

  1. I now make mine with just raw cashew straight into my TM as I have since discovered that my chn reacted too the cashew being roasted. I do add a little bit of oil if needed.

    • Hi Belinda, it will last for a several weeks without a problem. Although it doesn’t usually last that long at our place. It is consumed quickly. 🙂
