Beef stir fry with Udon Noodles

I love making this dish when we are camping. It is quick and easy utilising the Varoma. If you do not have a Thermomix or you are without power when camping, I have done this over gas in a wok / large frying pan. This dish is suitable for the failsafe diet. You can easily use any  vegetables you have. I always travel with a small container of my own home made vegetable stock, dried herbs, garlic salt and golden syrup. Udon noodles are also great for camping meals. It helps to have the vegetables ready to go before starting to cook. Since discovering how to cook the egg this way from Quirky Cooking, I use this technique regularly.

Beef Stir fry with Udon Noodles

600g stir fry beef
4 tablespoons golden syrup
150g green beans (or enough to feed your family)
1 choko, julienne
1 x 440g pkt of Udon or Rice noodles
Garlic salt
1 small or ½ large leek
1 clove garlic
5 Brussels sprouts
80g veg oil
1 tablespoon veg stock
sprinkling of dried parsley and chives
4 eggs

Marinate beef in the golden syrup for 20 minutes or while preparing all the ingredients. Trim beans and peel and julienne the choko. Place the noodles, beans and choko into the Varoma bowl. Sprinkle with garlic salt.

Place leek, garlic and Brussels sprouts into the Thermomix bowl. Chop on speed 7 for 2 seconds. Add oil and cook on 100 deg for 3 minutes speed 1. Add the beef, stock, and dried herbs to the Thermomix bowl.  Place the Varoma bowl on top of the Thermomix bowl.

Scrunch up and wet a piece of baking paper. Open it out flat and spread it on the top Varoma tray making sure it comes up the sides a bit without covering the steam holes. Whisk the eggs in a small bowl and pour on top of the paper. Cook on Varoma temperature for 18 minutes reverse speed stir.

Once cooked, cut the egg into strips while it’s still on the tray. Pour the noodles and vegetables into the thermoserver, top with the meat from the Thermomix bowl and stir to combine. Top with the egg. Serve in bowls. Enjoy!

Notes:
Make sure the Thermomix is on a flat surface when making this dish. I discovered it wasn’t at one of our camp sites when I poured the egg into the Varoma tray, lol!  You can add any vegetable you like in this dish and any of the staples you like to take camping with you to adjust the taste.

  1. Hi, which veg stock do you use as a failsafe? We have just started the challenges and are so far not good on our first challenge – salicylates… So I’m trying to figure out how to get taste into the cooking and am really missing stock!

    • Hi Liza, Thanks for asking, I have my own recipe for veg stock concentrate. I have just added the link to it in the ingredients list. This stock is very versatile and you can add what ever veggies you have on hand.
